Sunshine Coffee Opening North Beach Flagship, Planting Roots in the Neighborhood the Founders Call Home

Less than a year after opening on Española Way, Sunshine Coffee is expanding with the opening of its North Beach flagship (7351 Collins Avenue) on Thursday, June 4, the most ambitious and personal project yet for founders Alan Philips and Gelareh Mizrahi. Located in the neighborhood the couple calls home, the new café was designed to feel like an extension of the community: a laid-back all-day spot for morning coffee runs, post-beach soft serve, casual lunches and everyday rituals.

“We believe deeply in the future of North Beach and want Sunshine and our family to be part of the fabric of the neighborhood,” says Philips.
The couple lives in North Beach with their four children — River, Teddy, Sunshine and Lucky, who was born shortly after the Española Way shop opened. As Philips puts it: “First we had Sunshine, then we got Lucky.” The brand itself is named after their daughter Sunshine, and the new flagship was built with the same spirit, a place where everyone is welcome, no matter who they are or what they have.

“Sunshine has always been about lifting people up, one cup at a time,” says Philips. “This space is for everyone: the neighbor who comes in every morning, the kid getting their first soft serve, the family stopping by after the beach. That’s the whole point.”
Designed with the beach in mind, the flagship features soaring 15-foot curved ceilings, a sculptural wave-inspired coffee bar, and a bright palette that transitions from sunshine yellow to ocean blue throughout the space. Mizrahi, the acclaimed fashion designer whose handbags have been carried by the likes of Taylor Swift, Kylie Jenner and Hailey Bieber, brought the same eye for whimsy and craft to the space, bringing the playful aesthetic to life.

“We wanted to take everything people love about Sunshine and turn the volume up,” says Mizrahi. “More joy, more beauty, more magic, and a flagship that feels like stepping into the brand at its happiest.”
The new location brings back the Sunshine Coffee favorites that created its cult following, including the espresso-and-cold-foam Miami Iced, alongside its beloved variations including the Cinnamon Toast Crunch, Bananababy and Super with protein, biotin and collagen. Coffee beans continue to be locally roasted in Miami Gardens by head roaster Salomon Moreno.

The matcha program has been expanded under the Gelly’s Matcha section, named for co-founder Gelareh, a signature lineup of creations that bring her aesthetic into liquid form. The matcha is a custom blend created for the brand in Kyoto and Kagoshima. Among the offerings is the Baby Blue Butterfly Vanilla Matcha with strawberry foam, Sunshine’s most-requested matcha, now a permanent fixture.
The smoothie menu favorite, Super Fantastic (blue spirulina, almond butter, Greek yogurt, tahini, honey, date, and milk), returns along with the full lineup of Miami-style frozen lemonades and organic iced teas.

The food menu mixes returning favorites with several new additions. Returning favorites include:

The Sunshine Breakfast Sando — Eggs, thick-cut bacon, and cheddar on a fresh-baked English muffin
Pancake Cake — Buttermilk pancake batter baked into a moist, tender cake, served by the slice and topped with honey butter. The Sunshine original that broke the internet.
Brown Butter Focaccia Cinnamon Roll — A breakfast classic reimagined with airy Italian focaccia dough, brown butter and a swirl of cinnamon sugar
Truffle Hashbrowns with Caviar — Crispy hashbrowns finished with truffle and topped with a generous spoonful of caviar
Shakshuka Breakfast Tacos — Spicy tomato scramble, Persian feta, and pickled onions on warm corn tortillas
Sundrop Doughnuts — Sunshine’s signature golden doughnuts, made fresh daily.
New items on the menu include:
Chopped Chicken Caesar — Grilled chicken, crisp romaine, shaved parmesan, and house-made croutons tossed in a creamy Caesar with a hit of lemon
Chopped Buffalo Chicken Caesar Wrap — The Chopped Caesar’s wilder cousin, tossed with buffalo sauce and wrapped tight
Spicy Tuna Wrap with Crispy Rice Crumble — A Sunshine spin on the spicy tuna roll.Sushi-grade tuna, avocado, and spicy mayo wrapped with a crispy rice crumble that adds crunch in every bite.
Huevos Rancheros Burrito — Scrambled eggs, black beans, melted cheese, ranchero salsa, and avocado in a warm flour tortilla
Tuna Carpaccio Bagel — Thinly sliced tuna carpaccio, lemon, capers, and olive oil over a fresh-baked bagel
Exclusive to the North Beach location, Sunshine Coffee will debut a new soft serve program made with all-natural ingredients and no added sugar. Available in the brand’s signature colors, guests can enjoy Yellow vanilla, naturally colored with turmeric, and Blue Greek yogurt, naturally colored with spirulina. Additional dairy-free options coming soon.

The soft serve will be featured in new signature creations including:

The Sunshine Affogato — A scoop of soft serve drowned in a shot of fresh espresso
The Dream Team — A warm, gooey cookie topped with a swirl of Sunshine soft serve
The new ice cream offerings were created with the same philosophy as everything else on the menu – indulgent, beautiful and built to make people feel good.
With two locations open and a vision to expand across Miami, Sunshine Coffee remains rooted in the same idea it started with: that a coffee shop can be a home, a gathering place, and a daily reminder to see the good in all things, while lifting people up, one cup at a time.
