Seawell Fish N’ Oyster celebrates the best of coastal American sea fare with the appointment of a new culinary team. Kimpton Angler’s Hotel South Beach welcomes Raymond Fiorello, Executive Chef, and Eric Kramer, General Manager, Restaurants, Bars and Events, to lead the culinary program for Seawell Fish N’ Oyster, Minnow Bar and Kimpton Angler’s.

Seawell Fish N’ Oyster’s newly appointed Executive Chef Raymond Fiorello brings nearly 30 years of experience in the kitchen to his current role, along with a flair for combining flavors and textures in novel ways to create memorable, palate-pleasing dishes. Together with General Manager Eric Kramer’s energy and experience, the two are also tapping the spirit and flavor of Miami by teaming with local purveyors, makers, and producers – from neighborhood breweries to bakeries – to create an unforgettable dining experience.

Under the direction of Kimpton Angler’s General Manager, Sinem Kaya, Fiorello and Kramer will drive the property’s new dining and cocktail offerings, debuting all-new dinner and brunch menus at Seawell Fish N’ Oyster, and a new bites menu at Minnow Bar, that feature innovative plays on the classics. The duo has also introduced a new pool deck menu and will be expanding the food and beverage offerings with a robust program that includes the following:

Just in time for fall, the new menus at Seawell Fish N’ Oyster are a combination of tried-and-true classics taken up a notch, alongside inventive entrée selections that include finfish, shellfish, and non-seafood items. Together, they offer a broad range of flavors that appeal to all palates. Adding a fresh touch and bright flavors to each dish, are homegrown herbs from Kimpton Angler’s Breezeway Garden, curated by Little River Cooperative, a multidisciplinary farming project based in Miami’s Redland agricultural district. 

Seawell’s new dinner menu includes such dishes as Coquille Aquahile (sea scallop, serrano chile, kumquat, avocado, cilantro); Jersey Style Jump Lump Crab Cakes (with Old Bay fries, chipotle mayo, seasonal vegetables); and Bacon-&-Eggs (Southern deviled eggs, crisp pork belly, spicy pepper jelly glaze). 

Meanwhile, on the new brunch menu, sweet meets savory with dishes like Cannoli Cream Stuffed French Toast with Amaretto Syrup; Bodega Bagel Sandwich (fried egg, griddled ham, pepperjack, jalapeño cheddar bagel by Bagel Max, and potatoes); and Acai Bowl with Mixed Berries, House Made Granola, Bananas, Toasted Coconut and Honey. 

“While the approachable, coastal food favorites that have made Seawell Fish N’ Oyster a North of Fifth Washington Avenue favorite remain the focus, the new vision for the restaurant is to get creative with our fresh fish and shellfish selections and present a menu where each dish – from appetizers to entrees – is a specialty of the house,” said Fiorello. “Seafood should be savored, and I look forward to incorporating Miami’s virtually endless array of local and international influences into everything we do to bring seafood dining to a whole new level.”

About Raymond Fiorello, Executive Chef – Chef Raymond Fiorello is an accomplished chef recognized for his artful ability to blend the highest quality seasonal ingredients with superior technique and creative composition. A self-described perfectionist, Fiorello has spent much of his career developing menus and recipes as Executive Chef for restaurants, hotels, and conference centers in destinations best-known for their seafood offerings, including Baltimore’s Kimpton Monaco; Roosters Southern Kitchen in North Carolina; New York City’s Po’ Restaurant (where he had an opportunity to work alongside Chef Mario Batali); and the Doral Forrestal Conference Center in New Jersey near Chesapeake Bay. Throughout, Fiorello’s responsibilities have included all facets of restaurant management and food production, from menu planning to banquets to concepting. A graduate of the New York Institute of Culinary Education, Chef Fiorello has been cooking professionally for almost 30 years. He looks forward to celebrating seafood with the abundance of flavors and influences only found in Miami to make Seawell Fish N’ Oyster a stand-out among the destination’s best of the best.

 

About Eric Kramer, General Manager, Restaurant, Bar and Events – Eric Kramer joins Kimpton Angler’s following close to three years as Director of Food & Beverage at Kimpton’s The Shore Break Resort – Pacific Hideaway in Huntington Beach California. Kramer graduated with a bachelor’s degree in Hospitality and Culinary Arts from Johnson & Wales University in Providence, Rhode Island. Throughout his 20+ years in the food and beverage industry, Eric has worked with such acclaimed concepts as TAO Group/Dream Downtown Hotel and Hakkasan Group in New York, and Sushi Samba Group in Miami. Kramer was also a partner in the opening of Bounce Sporting Club in Chicago before fully embarking on his hospitality career. Kramer is excited to bring his wide range of experiences – from high volume craft beverage programs to managing culinary programs at Michelin-star venues – to Kimpton Angler’s as he looks to make Seawell Fish N’ Oyster and Minnow Bar industry-leading destinations in Miami Beach.

 

Seawell Fish N’ Oyster: The Experience – With both indoor and outdoor seating available, Seawell Fish N’ Oyster’s inviting entrance is adorned with lush, green foliage surrounding the 16-seat covered patio that leads to the interior dining room. Black and white striped awnings and stringed lights cover the outdoor patio paired with teak tables, canvas director chairs and floor lanterns giving the space a warm, cozy experience perfect for any alfresco dining occasion. 

Inside, guests are greeted with a relaxed, nautical-inspired 38-seat dining room embellished with organic design elements that set a warm and neutral tone such as nautical ropes, white linen banquettes, rustic wood dining chairs with maple-top tables, and soft leathers. Chic lighting and two sets of French doors peer out onto the surrounding Tuscan-meets-tropical garden space. 

Located just steps away in the restaurant’s back patio, is the Mermaid Lounge which hosts a 36-seat “secret garden” named after its original decorative wall mosaic of a sea siren. The Mermaid Lounge offers additional relaxed al fresco seating with teak tables, canvas director chairs, communal lounge areas, and floor lanterns combined with greenery all around and stringed lights above creating an enchanting, elevated yet intimate oasis in the heart of Washington Avenue.
