International hospitality leader Noble 33 opened its first Miami restaurant, Sparrow Italia, in the Wynwood district at 255 NW 25th Street on October 1. This hotly anticipated follow-up to the Mayfair, London location (launched in 2022), frequented by VIPs Alicia Keys, Adele, Serena Williams, Gary Barlow, Elon Musk, Cameron Diaz, Adam Sandler, Allison Janney, Patrick Mahomes, and Novak Djokovic, among others, will entice food lovers with a modern take on Italian dining unbound by preconceptions.
From Noble 33 Co-Founders Tosh Berman and Mikey Tanha, Sparrow Italia draws inspiration from Italy and the Mediterranean. Noble 33 Corporate Executive Chef Martin Heierling is at the helm of executing Sparrow Italia’s expansive menu, which pays tribute to Italy’s national bird, symbolizing joy, simplicity, and freedom of the soul. The flavors transcend eras and oceans with innovative and elegant ingredients and preparations.
The inventive and varied selections unfold over multiple sections to tempt and delight all types of palates. Highlights from the Chilled and Raw Section include Wagyu Carpaccio with pickled mushrooms, parmigiano, pine nuts, umami aioli, shaved black truffles; and Oscietra Caviar with traditional accoutrement such as minced onion, chopped egg yolk and white, crème fraiche, and an Italian polenta pancake. The Truffle Cacio e Pepe Tagliatelle with toasted cracked pepper, parmigiano, and black truffle, tossed in a pecorino wheel, will engage devotees of contemporary Italian food as they peruse the robust Pasta offerings. All pasta is made in-house, by hand, using high-quality wheat and stone-ground flour imported from Italy, and all are available gluten-free except for the Bone Marrow Cappelletti, consisting of braised beef cheeks, roasted bone marrow, horseradish, and Barolo reduction. The Butcher’s Reserve and Seafood & Poultry Sections showcase several exceptional single-source cuts, such as the 34-ounce Prime Fiorentina from Aberdeen, South Dakota. Make it a surf and turf, and add the Whole Lobster Oreganata coated in panko-parmesan, garlic, parsley, and lemon. End the evening on a sweet note with signature Desserts, such as the Sparrow Hazelnut Rocher with crispy feuilletine, toasted hazelnut, and Nutella cream; and Amalfi Lemon Delight with lemon cream, lemon sponge cake, lemon, and mint filling.
Available exclusively at Sparrow Italia’s bar will be a Pizza by the Slice menu, featuring numerous gourmet variations from the savory Pollo alla Vodka with vodka marinara, buffalo mozzarella, chicken Milanese, fresh basil, Pesto and Calabrian chili to the sweet and hot Dolce e Piccante with arrabbiata, fresh burrata, basil, and truffle honey. Additional highlights will include the Cibo di Coniglio with jalapeño, sauteed onion, and sun-dried tomato, and the Carnivoré topped with ground japanese wagyu, pomodoro, mozzarella, wagyu salami, and wagyu pepperoni.
Curated by Noble 33 Beverage Director Juan Carlos Santana, Sparrow Italia’s beverage program will embrace a love for Italian wines and spirits. Using fresh, seasonal ingredients, guests will also enjoy modern and classic cocktails, as well as a variety of spritzes and Negroni variations. The wine list will focus on Italian-American selections and features growers who utilize responsible farming practices. From the high-altitude region of Alto-Adige to the island of Sicily, Italy‘s rich winemaking history and traditions will be displayed at Sparrow Italia. American wines, Champagne, and a handful of other white wines will play an organic role in complementing the cuisine.

Sparrow Italia Miami will accommodate 232 guests across the 8,700-square-foot venue, with architecture by Kobi Karp Architecture. Upon entering Sparrow Italia, guests will be greeted by a statement bar with a soft, leathered stone top and artfully curated decor featuring an array of glass bottles. Arched booths interlaced with an arrangement of colored ropes will create an intimate dining experience, while a series of grand suspended wood arches will frame a unique sunken dining room, adding a layer of grandiosity and romanticism. Designed by ICRAVE, a Journey studio, Sparrow Italia will be characterized by desaturated blue velvets, textured Venetian plaster, and carved wood paneling with inset bronze mirror and brass metal detailing softly illuminated by the warm glow of candlelight. The simplicity of the restaurant’s material palette will speak to the honesty and integrity of its Italian cuisine, delivering innovative flavors with the finest ingredients.
Following Sparrow Italia, Noble 33 will open a second flagship restaurant, Casa Madera, a coastal Mexican dining experience with European influence. The international hospitality group, known for its high-energy restaurant concepts, will continue to grow its Miami footprint with the openings of Toca Madera and Meduza Mediterrania in 2025.
