Opening its doors this October, the renowned Chef Juan Manuel Barrientos’ new restaurant is a vibrant oasis that celebrates the joy, flavor, and culture of the colorful streets of Cartagena De Indias.

Following the success of Chef Juanma’s Elcielo SLS South Beach pop-up, a new iteration, Cartagena, portrays a distinct Colombian culinary journey that highlights the tropical region and cultural influence that stems from its Indigenous, European, and African heritage. With dishes displaying a harmonious blend of exotic fruits and traditional flavors, guests are transported through diverse landscapes and rich traditions.

Delectable and coastal, the menu features a selection of small bites, ceviches, salads, and mains from land and sea, each bite capturing the essence of Cartagena’s cultural mosaic. In true Chef Juanma style,  guests can find reimagined traditional dishes like Corn Bunuelos, Ropa Vieja Croquetas, Cheese and Plantain Empanadas, Crab Arepas, Chicharron Ceviche and Titote Rice. Adding an unexpected twist, the menu also presents innovative creations like Smoked Wagyu Nigiri, Wagyu Tartare, Lobster Roll, and Grilled Tuna, which seamlessly blend remarkable flavors with a touch of Colombian influence.

Showcasing an artful approach to crafting libations, cocktails evoke the dynamic spirit of the Caribbean, featuring botanical notes and seasonal fruits such as lulo, melon and passion fruit. Captivating creations like the Herbal Old Fashioned, Brugeria, and Cholon Sour enhance the flavor profiles of each dish.
