Corporate Wine Director John Slover designed this program to entice both seasoned connoisseurs and casual wine lovers. “Our goal is to create a space where guests feel excited to discover something new, whether it’s a rare vintage or a sommelier’s impromptu recommendation,” he shared.

CARBONE VINO’s design reflects the glamour and timeless charm of the original CARBONE in New York’s Greenwich Village. Conceived by Bishop Design, the space features moody, romantic interiors with curated artwork by Vito Schnabel and bold design elements like gold-accented wallpaper, heavy velvet drapes, and custom leather banquettes.

The bar is a centerpiece, serving the full menu and offering a welcoming space for walk-ins—a unique feature exclusive to this Coconut Grove location.
