Miami’s culinary scene is about to reach new heights as Major Food Group (MFG), the hospitality powerhouse behind some of the city’s most celebrated dining destinations, unveils its latest masterpiece: CARBONE VINO. This debut marks the group’s ninth Miami venture and brings the unmistakable CARBONE experience—along with exciting new elements—to the heart of Coconut Grove.
Responding to overwhelming enthusiasm for CARBONE beyond Miami Beach, CARBONE VINO offers all the signature dishes fans know and love, complemented by new culinary creations and one of Miami’s largest and most dynamic wine collections. This isn’t just a new restaurant; it’s an evolution of the CARBONE legacy.
A Menu of Classics and New Favorites
True to its heritage, CARBONE VINO celebrates the tradition of New York-style Italian cuisine, offering signature dishes like Caesar Salad alla ZZ, Spicy Rigatoni alla Vodka, and Veal Parmesan. However, it also introduces exclusive creations that reflect MFG’s commitment to culinary innovation.
Highlights include:
- Zucchini Fritti and Zuppa di Mussels with lamb sausage and basil.
- Shrimp Toast Bruschetta, featuring ruby red shrimp, Calabrian chili, and sesame.
- Seasonal Italian classics like Pumpkin Agnolotti and Chicken Cacciatore.
- Decadent desserts, from Cannoli Sundaes to Pistachio Tiramisu.
“We’re crafting something truly special for Coconut Grove,” said Chef Mario Carbone, Co-Founder of MFG. “It’s the CARBONE experience, reimagined with fresh ideas that diners will want to return to again and again.”
A Wine Lover’s Paradise
CARBONE VINO’s wine program is unmatched, featuring a collection of over 3,000 bottles and 600 selections from top winemaking regions worldwide. The curated list includes rare vintages and an extensive selection of wines by the glass, allowing guests to savor fine wines without committing to a full bottle.
Corporate Wine Director John Slover designed this program to entice both seasoned connoisseurs and casual wine lovers. “Our goal is to create a space where guests feel excited to discover something new, whether it’s a rare vintage or a sommelier’s impromptu recommendation,” he shared.
Designed for Elegance and Escape
CARBONE VINO’s design reflects the glamour and timeless charm of the original CARBONE in New York’s Greenwich Village. Conceived by Bishop Design, the space features moody, romantic interiors with curated artwork by Vito Schnabel and bold design elements like gold-accented wallpaper, heavy velvet drapes, and custom leather banquettes.
The bar is a centerpiece, serving the full menu and offering a welcoming space for walk-ins—a unique feature exclusive to this Coconut Grove location.
“We wanted to create an environment where every element—from the interiors to the playlist—feels in perfect harmony, offering an escape from everyday life,” explained Paul Bishop, Founder of Bishop Design.
A New Chapter for CARBONE in Miami
CARBONE VINO is more than a restaurant; it’s a celebration of culinary artistry, impeccable design, and unparalleled hospitality. As MFG Co-Founder Jeff Zalaznick put it, “This is the next chapter of CARBONE in Miami—a restaurant that will quickly become everyone’s favorite spot in Coconut Grove and beyond.”
As 2024 concludes, CARBONE VINO stands as a testament to MFG’s ability to redefine dining experiences. Whether you’re a loyal CARBONE fan or new to the brand, this Coconut Grove addition promises to be the year’s most exciting culinary debut.
